I'm using my iPad for navigation for my classic Montauk—an open skiff, in Alaskan waters, ]in a rain forest.
What case for a iPad 6th-generation is truly waterproof? I prefer a case with something to hold it down on my console.

I really cannot offer any first-hand experience with an iPad, a case, and heavy rain or spray. I haven't tried using my iPad on the boat.
As a general observation, electronic devices are usually rated by an ingress protection or IP code or index. The first digit rates the ability to protect against dust ingress, which is probably not particularly useful in a marine application. The second digit rates the ability to protect against harmful ingress of water into the device. The categories are explained in an article at Wikipedia:

A rating of IP68 is probably about the best that can be obtained for most devices. On that basis, a case advertised as providing protection to IP68 is probably suitable.
