Since you have access to the boat, there are already remote throttle-shift cables installed, and you want the replacement cables to be the same length, then:
Q5: why can't you just measure the length of the existing remote shift-throttle cables to discover their length?

I had hoped to pre-buy the cables and pull them through the [rigging tunnel path] with the old cables.
I ended up running a line [that followed the rigging tunnel path of the existing cables], from which I found that the cable length was 18-feet.
Moderator's note: on a center console boat build by Boston Whaler, there is usually a rigging path provided between the helm console and the engine splash well area that is concealed below the deck. This path is generally known as a "rigging tunnel" although is some instances it is not a completely enclosed tunnel but is a molded trench in the hull liner that is then covered by a section of the cockpit deck that may be able to be removed. The illustration below shows a typical arrangement for a rigging tunnel as seen when the deck cover has been removed:

These cables typically may have a part number or maybe a coding in the part number which tells you the length presently installed. On an older boat the sun may have removed the part number so look where the sun doesn’t shine, inside the console, if not visible elsewhere.
If your steering cable is sticking, that may be caused by the outboard pivot tube having rusted inside where the steering cable passes through, there may be nothing wrong with your cable. Or maybe you are just doing preventative maintenance ?
