Q2: or, should the bunks should the bunks on a bunk trailer with keel rollers be adjusted to be on the outer side [outboard] of the hull strakes [runners]?
I think the [more outboard position of the] bunks will give the hull more support [against] rocking side-to-side.
ASIDE: I have seen trailers [somewhere] on the internet with no keel rollers and with just bunks supporting the boat.

If the boat weight is primarily supported by multiple keel rollers, then the bunks should be set up somewhat outboard from the keel center line, and just inboard of the hull runners.
